Chef Cat, as many of his students know him, has been in the baking and pastry industry since 1985 to present day. Chef Cat was born in Mexico City, Mexico and comes from humble beginnings. He comes from a family that values hard work and instilled a strong work ethic in him from a young age. At the age of 17, Chef Cat worked in the International Airport kitchen in Mexico City. It was there that Chef Cat saw the possibility to grow in the culinary industry. He moved to the United States in search of better educational opportunities. Chef Cat has worked in numerous renowned hotels, country clubs, and fine dining restaurants. Chef Cat has competed in National and International culinary competitions winning gold medals for his culinary creations. Chef Cat was a participant in the James Beard Foundation, in 2005. Chef Cat is a natural wanderlust and has been a journeyman during his career traveling all around the world to expand his knowledge in the culinary industry. Traveling around the world has allowed him to appreciate the richness of global gastronomy, understand the significance of food in different cultures, and develop a more nuanced understanding of how food reflects history, geography, and societal values. Chef Cat shared “I have gained a deeper appreciation of global cuisine”. Chef Catemaxca was also part of the culinary olympics in Germany, in 2008 with the Art Institute of Houston team. Chef Cat was also a culinary instructor for the Art Institute of Houston for 27 years. Chef Cat states, “ It is an honor and pleasure to serve my community”. Now Chef Cat has decided to start a family owned business alongside his wife Alexandra who also graduated in 2003 with her culinary degree and together they decided to start their business and serve the Katy community and fellow Texans.
